From 25,000 Pretzels a Week to a Community Anchor in Texas

 

After building a thriving pretzel company in Colorado for 14 years, producing 25,000 handmade pretzels weekly and earning statewide recognition, the Bryant’s weren’t planning another big move, until family changed everything. When visiting Texas to visit their daughter attending Tarleton, they fell in love with Stephenville but noticed something surprising; There was no authentic East Coast-style pizza in sight. One visit turned into a bold idea. With a one-year goal and plenty of faith, Mark and Diane packed up and moved on April Fool’s Day, to begin their next journey.

 

They launched a food truck to introduce themselves to the community. Within three months, it exploded in popularity, drawing college students, faculty, Stephenville residents, and visitors. Their success caught the attention of a local property owner, leading to a brick-and-mortar opportunity just off the town square.

 

Deeply influenced by East Coast Italian and European culinary traditions, Mark crafts everything from scratch using imported Italian flour, olive oil, and beef tallow. He is equally committed to offering cleaner, higher quality ingredients and thoughtfully prepared menu options that prioritize freshness and flavor without cutting corners. The Bryan’s vision extends beyond food. Named in honor of Ruth Buzzi, with support from her family, the pizzeria is rooted in legacy and community spirit.

 

With guidance from the SBDC, the Bryant’s refined their business strategy, strengthened financial projections, and confidently navigated the transition from food truck to storefront. “The SBDC helped me turn a leap of faith into a real strategy,” Mark shared. “They gave me clarity and direction when we needed it most.”

 

Highly invested in Tarleton students, local churches, and area families, Mark and Diane hire primarily college students. Looking ahead, he plans to expand into a safe, welcoming gathering space with pool tables, games, and late-night hours, giving college students a fun, alcohol-free place to connect and unwind.
